Spicy Pork Chili

For Mom and Dad's anniversary I cooked dinner. It turned out really good!!! It's from the Best of Country Slow Cooker Recipes Vol. 2.
Printable Recipe.

Spicy Pork Chili
2 lbs. boneless pork, cut into 1/2 inch cubes
1 Tbsp. vegetable oil
1 can (28 oz) crushed tomatoes
2 cups frozen corn
1 can (15 oz) black beans, rinsed and drained
1 cup chopped onion
1 cup beef broth
1 can (4 oz) chopped green chilies
1 tbsp chili powder
1 tsp minced garlic
1/2 tsp salt
1/2 tsp cayenne pepper
1/2 tsp. pepper
1/4 cup minced fresh cilantro
Shredded cheddar cheese, optional

In a large skillet, cook pork in oil over medium-high heat for 5-6 minutes or until browned. Transfer pork and drippings to a 5-qt. slow cooker.
Stir in the tomatoes, corn, beans, onion, broth, chilies, chili powder, garlic, salt. cayenne and pepper. Cover and cook on low for 6 hours or until pork is tender. Stir in cilantro. Serve with cheese if desired. Yield: 6 servings.

Note: Instead of crushed tomatoes I used diced tomatoes. I season the meat with chili powder and also add the tablespoon to the base. I didn't use any of the cayenne pepper or the cilantro. The minced garlic is Gourmet Garden.

Hunted By: Clair M. Poulson

This book was amazing. We listened to it on a trip and hated having to stop since that meant the book had to be paused. The story line is very easy to follow but has just enough suspense to keep you going. It has room for you to make predictions that are conceivable.

Zach Barlow, a young returned missionary, didn’t want Caden Pendleton to join his group of friends on a hunting trip to the High Uintahs. But the newcomer’s offer to help pay expenses changed Zach’s mind, despite his misgivings. Yet when Caden’s temper stirs up trouble in camp, Zach’s misgivings turn to regrets. And when Caden is found dead in the woods, shot with a hunter’s rifle, those regrets turn to raw panic. Zach’s hunting camp has become a murder scene, and the murder weapon’s owner—a young woman named Bria—is nowhere to be found.
As Sheriff Lee Rutger and his deputies confront the mystery of the dead man and the missing girl, more disappearances follow. Can the sheriff stop the relentless hunter before he himself becomes the hunted?

Too Much Fun!

I’ve decided that I have too much fun playing on the computer. I love to start with a bunch of stuff and have it all come together. They aren't all that good but I enjoy it!

Thanks to Blog Designs By Dani I found Pixlr. It's a great photo editor. You can create projects or you can give images a retro vintage look. I love it!!! Dani also has tons of cute backgrounds and matching banners. Plus great information/tutorials on how to do different things yourself.

There are lots of pictures so beware!!!

This was a picture that I edited using Pixlr's Retro Vintage Effects.

This one was random. It's bright and still kind of pastel.

This one is meant to be patriotic.

The banner for Jessi's Blog!

One of my past banners. I love the colors in this one though I think 'My' is a little hard to read with the four color layers.

Cute black and green background. Could work for St. Patty's Day.

Banner for the family blog. It is the same paper and materials as the next one down.

One of my banners. It was different but I like it.

Trapped By: Michael Northrop

This was a pretty good book. I think it could make an interesting movie. My only problem with the book was the ending. I wanted to know a little bit more about what happened after they were rescued and how the town faired after all of the snow stopped. Did it melt or did it remain for some time??
The day the blizzard started, no one knew that it was going to keep snowing for a week. That for those in its path, it would become not just a matter of keeping warm, but of staying alive....
Scotty and his friends Pete and Jason are among the last seven kids at their high school waiting to get picked up that day, and they soon realize that no one is coming for them. Still, it doesn't seem so bad to spend the night at school, especially when distractingly hot Krista and Julie are sleeping just down the hall. But then the power goes out, then the heat. The pipes freeze, and the roof shudders. As the days add up, the snow piles higher, and the empty halls grow colder and darker, the mounting pressure forces a devastating decision....

The Doctor's Daughter By: Amy Blizzard

This book was so cute!!! I loved it and would love to see it made into a movie.

Templeton, Missouri, is in desperate need of a doctor to treat the scarlet fever epidemic that has infected their town and claimed the life of their local doctor. Boston native Dr. John Carson is their only hope. Molded by a lifetime of pain and loss, John is impersonal and withdrawn, and treats symptoms instead of people. When he arrives in Templeton, he finds he must work with Sarah Bethel, the late doctor's daughter who has been treating the ill, and his staunch attitude is challenged. She is bright, caring, dedicated to her neighbors, and has a temper that matches his! He is mesmerized by the woman whose fiery spirit infuriates him and inherent compassion intrigues him. Will Sarah's kindness be enough to heal the scars of the past and allow John to open his heart and create a new future?
